  • 1 cup (240ml) heavy whipping cream, cold
  • 1/2 cup (60g) powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries, washed
  • 1 cup kiwi, peeled and sliced
  • 1 cup mandarin orange segments (fresh or canned, drained)
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×13-inch pan or line it with parchment paper.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy (3-4 minutes). Add the egg and vanilla extract, mixing just until combined.
  3. In a separate bowl, whisk the flour, baking powder, and salt. Gradually add the dry ingredients to the wet, mixing on low speed until just incorporated. Avoid overmixing.
  4. Transfer the dough into your prepared pan and press it evenly to the edges using your fingers or a spatula.
  5. Bake in the preheated oven for 18-22 minutes, or until edges are golden and center looks set. Remove and cool completely on a wire rack.
