  • 2 packets of instant ramen (discard the seasoning packets)
  • 2 tablespoons vegetable oil (or sesame oil)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated or minced
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots, snap peas, or any favorites)
  • 1/4 cup creamy peanut butter
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili garlic sauce (optional, for heat)
  • 23 tablespoons water
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  1. Bring a saucepan of water to a boil and cook the ramen noodles for 2-3 minutes (or according to package instructions). Drain and set aside.
  2. In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, chili garlic sauce, and water until smooth. Adjust the consistency by adding more water if needed.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the minced garlic and grated ginger to the skillet. Sauté for about 30 seconds until fragrant (be careful not to burn it!).
  5. Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes, or until they’re tender but still vibrant.
  6. Reduce the heat to medium and add the cooked ramen noodles to the skillet. Pour the peanut sauce over the noodles and veggies.
  7. Toss everything together until the noodles and vegetables are evenly coated with the sauce. Cook for an additional 1-2 minutes.
  8. Remove from heat and transfer the stir fry to serving plates. Garnish with sesame seeds and sliced green onions.
  9. Serve immediately and enjoy!
