  • 1/4 cup (60 ml) low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil or neutral oil

  • Optional: sesame seeds for a nutty crunch
  • Optional: red pepper flakes for heat
  • Optional: 1 clove fresh garlic, minced

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add 8 oz (225g) of spaghetti or egg noodles and cook according to package instructions, usually 8-10 minutes, until al dente. Drain in a colander and set aside, reserving about 1/4 cup (60 ml) of the pasta water.
  2. In a small bowl, whisk together 1/4 cup (60 ml) soy sauce, 2 tablespoons honey, and 1 tablespoon Dijon mustard until smooth and well combined. Add minced garlic if desired.
  3. Warm 2 tablespoons olive oil (or preferred oil) over medium heat in a large skillet. Once shimmering, pour in the honey mustard glaze. Cook for 1-2 minutes, stirring frequently, until it thickens slightly and becomes glossy. Avoid burning.
  4. Add the drained noodles to the skillet with the glaze. Toss gently using tongs or a wooden spoon to coat evenly. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
  5. Taste and adjust seasoning if needed with black pepper or extra soy sauce. Remove from heat and garnish with chopped green onions and sesame seeds if desired.

Notes

Cook the honey mustard glaze over medium to medium-low heat and stir constantly to prevent burning. Save some pasta water to adjust sauce consistency. Use fresh honey and quality Dijon mustard for best flavor. For gluten-free, substitute soy sauce with tamari and use rice noodles. For vegan, substitute honey with maple syrup or agave nectar.
