  • 1/2 cup (100g) brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 3/4 cups (345g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (250g) strawberry jam
  • 1 cup (120g) powdered sugar
  • 23 tablespoons milk
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, cream together 1 cup softened butter, 1 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy—about 2-3 minutes.
  3. Add 2 large eggs (one at a time) and 2 teaspoons vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together 2 3/4 cups all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix—stop as soon as the flour is fully incorporated.
  6. Spread half the dough evenly into the prepared pan. Use a spatula to smooth it out.
  7. Spread 1 cup strawberry jam over the dough, leaving a small border around the edges.
  8. Top with the remaining dough, spreading it gently to cover the jam layer. Don’t worry if some jam peeks through—it’ll add a lovely marbled look to the bars.
  9. Bake for 25-30 minutes, or until the edges are golden and the center is set. Let cool completely on a rack.
  10. For the glaze, whisk together 1 cup powdered sugar and 2-3 tablespoons milk until smooth. Drizzle over cooled bars and finish with sprinkles.
