These bars capture the nostalgic flavors of a strawberry milkshake with a rich chocolate twist, perfect for Valentine’s Day or parties. They are quick, easy, and irresistibly creamy with a melt-in-your-mouth texture.

  • 1 ½ cups (190 g) all-purpose flour
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (25 g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (115 g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120 ml) whole milk
  • ½ cup (15 g) freeze-dried strawberries, finely crushed
  • ½ cup (75 g) fresh strawberries, diced (optional but recommended)
  • ½ cup (90 g) semisweet chocolate chips
  • ¼ cup (60 ml) whipped cream, plus extra for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) square baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, and salt.
  3. In a medium bowl, whisk melted butter, eggs, vanilla extract, and milk until smooth and glossy.
  4. Finely crush freeze-dried strawberries and fold them along with fresh diced strawberries into the dry ingredients.
  5. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just combined. Avoid overmixing.
  6. Fold in ¼ cup whipped cream gently to add softness.
  7. Transfer the batter to the prepared pan and spread evenly to about 1 inch thickness.
  8. Bake for 25–30 minutes until a toothpick inserted comes out with a few moist crumbs and bars spring back lightly when touched.
  9. Cool completely in the pan on a wire rack to prevent crumbling.
  10. Melt semisweet chocolate chips using a microwave in 30-second bursts or a double boiler, stirring until smooth.
  11. Drizzle melted chocolate over the cooled bars.
  12. Slice into 9 or 12 bars and serve with extra whipped cream or fresh strawberries if desired.

Notes

Do not overmix the batter to keep bars tender. Use room temperature eggs for better blending. Finely crush freeze-dried strawberries for even flavor distribution. Fold whipped cream into batter for a milkshake-like softness. Cool bars completely before slicing to prevent crumbling. Store bars in an airtight container to keep them soft. Bars can be refrigerated for up to 5 days or frozen for up to 1 month.
