Decadent Chocolate-Dipped Strawberry Waffle Rollups

Warm, golden waffles rolled around fresh strawberries and dipped in rich dark chocolate create a quick and easy homemade dessert that’s perfect for any occasion.

  • 2 tablespoons granulated sugar
  • 1 Β½ teaspoons baking powder
  • ΒΌ teaspoon salt
  • Β½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ΒΎ cup milk (whole or 2%) (180ml)
  • 3 tablespoons unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 pint fresh strawberries, hulled and sliced lengthwise (about 450g)
  • 1 cup dark chocolate chips or chunks (semi-sweet or bittersweet) (170g)
  • Optional: powdered sugar for dusting
  • Optional: chopped nuts like pistachios or almonds for garnish

Instructions

  1. Preheat your waffle iron and lightly grease the plates with butter or non-stick spray.
  2. In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, beat the eggs, then add milk, melted butter, and vanilla extract.
  4. Slowly pour the wet ingredients into the dry and gently mix until just combined; do not overmix.
  5. Pour about ΒΌ cup (60ml) of batter onto the waffle iron and cook for 3-4 minutes until golden brown and crisp. Repeat with remaining batter.
  6. Stack cooked waffles on a cooling rack and let cool slightly but remain pliable.
  7. Slice each waffle into strips about 1.5 inches wide.
  8. Place a few strawberry slices along one edge of each strip and roll up tightly.
  9. Melt the chocolate chips in a microwave-safe bowl in 30-second bursts, stirring until smooth, or use a double boiler.
  10. Dip each waffle rollup halfway into the melted chocolate using tongs or a fork, letting excess drip off.
  11. Place dipped rollups on a parchment-lined baking sheet and optionally sprinkle with chopped nuts or powdered sugar while chocolate is wet.
  12. Chill in the refrigerator for 15-20 minutes to set the chocolate.
  13. Serve at room temperature or chilled.

Notes

If waffles cool and become stiff before rolling, microwave for 10 seconds to soften. Use short bursts when melting chocolate to avoid burning. Adding a teaspoon of vegetable or coconut oil can smooth seized chocolate. For gluten-free, use a 1:1 gluten-free flour blend and dairy-free milk for allergy-friendly options.
