A quick and easy homemade dessert featuring airy strawberry mousse dipped in a shiny dark chocolate shell, perfect for special occasions or a cozy treat.

Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • ½ cup granulated sugar
  • 1 tablespoon gelatin powder (or agar-agar for vegetarian option)
  • ¼ cup cold water
  • 1 ½ cups heavy whipping cream, cold
  • 1 teaspoon vanilla extract
  • 8 ounces dark chocolate (70% cocoa)
  • 1 tablespoon coconut oil
  • Optional garnish: fresh mint leaves or extra chopped strawberries

Instructions

  1. In a blender or food processor, puree the hulled strawberries with ¼ cup of sugar until smooth. Pour the puree into a small saucepan and warm over medium heat until just simmering, not boiling.
  2. Sprinkle gelatin over ¼ cup cold water in a small bowl and let sit for 5 minutes until soft and spongy.
  3. Remove the strawberry puree from heat and stir in the bloomed gelatin until fully dissolved. Warm gently if needed but do not boil. Let cool to room temperature.
  4. Using an electric mixer, whip the heavy cream with vanilla extract and remaining ¼ cup sugar until stiff peaks form.
  5. Gently fold the cooled strawberry mixture into the whipped cream using a spatula with slow, sweeping motions to keep the mousse airy.
  6. Pour the mousse into a prepared 8-inch square baking pan or silicone molds. Smooth the surface, cover with plastic wrap, and chill in the refrigerator for at least 4 hours or overnight until firm.
  7. Once set, remove mousse from pan and cut into wedges. Melt dark chocolate with coconut oil in a double boiler or microwave until shiny and smooth.
  8. Dip each wedge halfway into the chocolate and place on parchment paper to set. Chill for 20 minutes to harden the chocolate shell.
  9. Garnish with fresh mint or chopped strawberries if desired and serve chilled.

Notes

Bloom gelatin properly to ensure mousse sets well. Chill mixing bowl and beaters for better whipped cream. Temper chocolate with coconut oil for a shiny, crisp shell. If mousse is too soft to cut, freeze for 10-15 minutes before slicing.
