A simple yet elegant chocolate covered strawberry bouquet platter that is perfect for gifting, entertaining, or treating yourself. This recipe combines fresh strawberries and rich chocolate to create a stunning edible arrangement.

Ingredients

Scale
  • 2 pounds (900 grams) fresh strawberries, medium to large size, with stems intact
  • 12 ounces (340 grams) high-quality dark chocolate, chopped or chips
  • 4 ounces (115 grams) white chocolate, for drizzling (optional)
  • 1 tablespoon (15 grams) unsalted butter
  • ½ cup (60 grams) crushed nuts such as pistachios or almonds for garnish (optional)
  • Sprinkles or edible gold dust for a festive touch (optional)
  • Wooden skewers or floral wire, food-safe, to assemble the bouquet
  • Wax paper or parchment paper for setting the dipped strawberries

Instructions

  1. Wash and dry strawberries thoroughly to remove all moisture, about 10 minutes.
  2. Line a baking sheet or large tray with wax paper or parchment paper.
  3. Melt the dark chocolate using a double boiler or microwave. Stir continuously until smooth, then add unsalted butter and mix well for a glossy finish (5-7 minutes).
  4. Dip each strawberry by the stem or using a wooden skewer into the melted chocolate, letting excess drip off. Place on the prepared tray. Rewarm chocolate if it thickens. This takes about 20 minutes.
  5. Let the dipped strawberries set at room temperature or refrigerate for 15-20 minutes until chocolate hardens.
  6. Melt the white chocolate in a separate bowl and drizzle thin lines over the set strawberries using a spoon or piping bag.
  7. While the white chocolate is still wet, sprinkle crushed nuts or edible glitter for garnish.
  8. Assemble the bouquet by threading each strawberry onto wooden skewers or floral wire and arrange in a vase or shallow platter lined with tissue paper or green leaves, taking 10-15 minutes.

Notes

If chocolate seizes, add a teaspoon of vegetable oil and stir quickly to smooth it out. Avoid refrigerating dipped strawberries for too long to prevent moisture and loss of shine. Use dairy-free chocolate for vegan or lactose-intolerant adaptations. Fresh strawberries are preferred over frozen for best texture and chocolate adherence.
