  • 1 egg, beaten (for egg wash)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine 1 cup warm water (110°F / 43°C) with 1 tsp sugar and sprinkle the yeast over the top. Let it sit for 5-7 minutes until foamy and bubbly.
  2. Make the dough: To the yeast mixture, add 2 1/2 cups all-purpose flour, 1 tsp salt, and 2 tbsp olive oil. Stir until a shaggy dough forms. Add more flour if too sticky.
  3. Knead: Turn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. First rise: Lightly oil a bowl, place dough inside, cover, and let rise in a warm place for 1 hour or until doubled in size.
  5. Prepare the filling: Cook Italian sausage in a skillet over medium heat for 7-8 minutes until browned. Drain excess fat. Stir in mozzarella, pizza sauce, Parmesan, Italian seasoning, and red pepper flakes if using. Remove from heat.
  6. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  7. Roll out dough: Punch down dough and roll into a 12×16 inch rectangle about 1/8 inch thick.
  8. Assemble pockets: Cut dough into 3×3 inch squares. Spoon about 1 tablespoon of filling into each square. Brush edges with beaten egg, fold over to form a triangle or rectangle, and press edges with a fork to seal.
