  • 2 cups shredded cooked chicken (about 300g), preferably rotisserie
  • 2 tablespoons ranch seasoning mix (store-bought or homemade)
  • 8 pieces 6-inch flour tortillas (soft and pliable, whole wheat optional)
  • 1 ½ cups shredded cheddar cheese (about 170g), sharp or Monterey Jack
  • 2 green onions, thinly sliced
  • 2 tablespoons melted butter
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Sour cream or ranch dressing for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Using a muffin tin, gently press each flour tortilla into the cups to form a bowl shape. Brush the inside of each tortilla with about 1 teaspoon of melted butter.
  3. Bake the tortilla cups for 7-9 minutes until they are just turning golden. Watch carefully to avoid overbaking.
  4. While the cups bake, mix shredded chicken, ranch seasoning mix, smoked paprika, garlic powder, salt, and pepper in a medium bowl until evenly coated.
  5. Remove the tortilla cups from the oven and spoon about 2 tablespoons of the chicken mixture into each cup without overfilling.
  6. Top each cup with about 1 tablespoon of shredded cheddar cheese and sprinkle thinly sliced green onions on top.
  7. Return the muffin tin to the oven and bake for an additional 8-10 minutes until the cheese is melted and bubbly and the edges of the tortilla cups are crispy and golden brown.
  8. Let the cups cool in the pan for 3-5 minutes to set before removing.
  9. Serve warm with sour cream or ranch dressing for dipping.

Notes

Brush tortillas with melted butter for best crispness and golden color. Use warm chicken for better seasoning adherence. Avoid microwaving leftovers to keep cups crispy; reheat in oven instead. Add a spoonful of sour cream or ranch dressing to chicken mix if dry. Substitute gluten-free tortillas or dairy-free cheese and butter for dietary needs.
