  • 1 ½ cups panko breadcrumbs

  • 1 ½ cups warm water (about 110°F)
  • 1 tbsp granulated sugar
  • 2 tsp active dry yeast
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp unsalted butter, melted
  • 10 cups water (for boiling pretzels)
  • ⅔ cup baking soda
  • Coarse sea salt for sprinkling
  • Honey mustard or spicy mustard (optional, for dipping)
  • Pickle slices (optional)
  • Cheese slices like cheddar or Swiss (optional)

Instructions

  1. Season the bite-sized chicken pieces with smoked paprika, garlic powder, onion powder, salt, and pepper. Set aside.
  2. Set up a dredging station with three shallow bowls—one with flour, one with beaten eggs, and one with panko breadcrumbs. Coat each chicken piece in flour, dip into the egg, then coat thoroughly with panko.
  3. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C). Fry the chicken pieces in batches for about 3-4 minutes until golden brown and cooked through. Drain on a wire rack or paper towels.
  4. In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy. Add melted butter, flour, and salt. Mix using a stand mixer with dough hook or by hand until smooth. Knead for about 5-7 minutes until elastic.
  5. Cover the dough with a damp cloth and let it rise in a warm spot for about 1 hour until doubled in size.
  6. Preheat oven to 450°F (232°C). Line baking sheets with parchment paper.
  7. Punch down the dough and divide into 20 equal pieces. Flatten each piece into a small disc. Place one fried chicken piece in the center and pinch the dough around it to seal, forming a slider bite.
  8. Bring 10 cups water and baking soda to a boil in a large pot.
  9. Using a slotted spoon, boil each dough-covered chicken bite for 30 seconds, flipping halfway. Remove and place on prepared baking sheet.
  10. Sprinkle coarse sea salt over each pretzel slider. Bake for 12-15 minutes or until deep golden brown.
