  • 1 tsp (5 grams) salt
  • 1 pound (450 grams) ground pork, preferably fresh and lean
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped (optional)
  • 1 tbsp soy sauce
  • ½ tsp ground black pepper
  • ½ tsp salt, or to taste
  • 1 tbsp vegetable oil, for sautéing
  • 1 egg, beaten (for egg wash)

Instructions

  1. Make the Pastry Dough: In a large bowl, combine 2 ½ cups (315 g) flour and 1 tsp salt. Add the cold, cubed butter. Using a pastry cutter or your fingertips, quickly cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized bits. Add ½ cup (120 ml) ice-cold water gradually, stirring gently until the dough just comes together. If it feels too dry, add a teaspoon more water at a time. Wrap the dough in plastic and chill in the fridge for at least 30 minutes.
  2. Prepare the Pork Filling: While the dough chills, heat 1 tbsp vegetable oil in a skillet over medium heat. Add finely chopped onion and cook for 3-4 minutes until translucent. Stir in minced garlic and cook another minute until fragrant. Add 1 pound (450 g) ground pork, breaking it up with a spatula. Cook until browned and cooked through, about 6-7 minutes. Stir in soy sauce, chopped parsley, chives, salt, and pepper. Taste and adjust seasoning if needed. Remove from heat and let cool slightly.
  3. Roll Out the Dough: Remove dough from fridge and place on a lightly floured surface. Roll it out to about ⅛ inch (3 mm) thick. Try to keep it roughly rectangular for easy cutting.
  4. Assemble the Baked Bites: Cut dough into 3-inch (7.5 cm) squares. Place about 1 tablespoon of pork filling in the center of each square. Fold the dough over to form a triangle or rectangle, pressing edges firmly to seal. Use a fork to crimp the edges, which helps prevent leakage during baking.
  5. Apply Egg Wash: Beat 1 egg in a small bowl. Brush the tops of each pastry bite with the egg wash to achieve a glossy, golden finish.
  6. Bake: Preheat oven to 400°F (200°C). Arrange the bites on a parchment-lined baking sheet, spacing them about 1 inch (2.5 cm) apart. Bake for 18-22 minutes until golden brown and crisp. Keep an eye near the end—you want that perfect flaky crust without burning.
  7. Cool & Serve: Let the bites cool for 5 minutes on the baking sheet before transferring to a wire rack. Serve warm or at room temperature.
