Crispy S’mores Rolls are a quick and easy dessert featuring gooey chocolate, toasted marshmallow, and crunchy graham crackers wrapped in a golden, pan-fried tortilla. Perfect for family gatherings, potlucks, or satisfying sweet cravings any time of day.

  • 6 large flour tortillas (10-inch; substitute gluten-free if needed)
  • 1 cup mini marshmallows (or snipped regular or vegan marshmallows)
  • 3/4 cup semi-sweet chocolate chips (or chopped chocolate bars, white chocolate, or dairy-free chips)
  • 1/2 cup crushed graham crackers (or gluten-free graham crackers or digestive biscuits)
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter (or coconut oil for dairy-free)
  • 2 tablespoons neutral oil (canola or vegetable)

Instructions

  1. In a small bowl, combine crushed graham crackers, chocolate chips, and mini marshmallows. Stir gently to mix.
  2. Lay out tortillas on a clean surface. Spoon about 3 tablespoons of filling onto the lower third of each tortilla. Roll tightly, tucking in the sides for a burrito-style seal.
  3. In a small bowl, stir together the sugar and cinnamon until well combined. Set aside.
  4. Heat a large nonstick skillet over medium heat. Add 1.5 tablespoons butter and 1 tablespoon oil, swirling to coat.
  5. Add three rolled tortillas seam-side down. Fry for 2-3 minutes per side, turning with tongs until golden-brown and crispy. Repeat with remaining rolls, adding more butter and oil as needed.
  6. Transfer fried rolls to a paper towel-lined plate to drain excess oil. While warm, roll each in the cinnamon-sugar mixture, coating all sides.
  7. Slice rolls in half on the diagonal for serving. Serve warm for best gooey texture.

Notes

Warm tortillas before rolling if they crack. For extra crunch, sprinkle graham cracker crumbs on the outside before frying. Fry in batches and avoid overcrowding the pan. Use medium heat for best results. Gluten-free and dairy-free substitutions work well. For a lighter version, bake at 375°F for 12-15 minutes, then brush with melted butter and roll in cinnamon-sugar.
