  • 2 tablespoons olive oil, for brushing
  • ½ cup pizza sauce (homemade or store-bought, San Marzano style recommended)
  • 1½ cups shredded mozzarella cheese (preferably whole milk mozzarella)
  • About 20 pepperoni slices (optional)
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 teaspoon smoked chipotle chili powder
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Slice each bagel in half horizontally and place cut-side up on the baking sheet in a single layer.
  3. Brush each bagel half generously with olive oil to achieve a crispy crust.
  4. Spread about 1 tablespoon of pizza sauce evenly over each bagel half, leaving a small border around the edges.
  5. Sprinkle 2-3 tablespoons of shredded mozzarella cheese over the sauce on each bagel half.
  6. Top with pepperoni slices if using, then finish with a light dusting of grated Parmesan cheese and dried Italian herbs.
  7. Bake in the preheated oven for 10-12 minutes until cheese is bubbly and edges are golden brown. Check at 9 minutes if your oven runs hot.
  8. While baking, whisk together sour cream (or Greek yogurt), mayonnaise, fresh lime juice, chipotle chili powder, garlic powder, salt, and pepper in a small bowl until smooth and creamy. Adjust seasoning to taste.
  9. Remove the pizza bagels from the oven and let them cool for 2-3 minutes to allow the cheese to set.
  10. Drizzle or dollop the zesty chipotle lime crema over each pizza bagel half just before serving.

Notes

Use fresh lime juice for best flavor. For dairy-free crema, substitute sour cream and mayo with vegan alternatives like cashew cream. For gluten-free, use gluten-free bagels or toasted gluten-free bread rounds. To get extra crispy bagels, broil for 1 minute at the end but watch closely to avoid burning. Do not add crema before baking to preserve its zesty brightness.
