Instructions

  1. Prep the pickled onions: In a medium bowl, combine apple cider vinegar, water, sugar, salt, and chili flakes if using. Stir until sugar dissolves. Add thinly sliced red onions, pressing them down to submerge. Let sit at room temperature for 20-30 minutes.
  2. Preheat oven to 425°F (220°C) and position a rack in the center.
  3. Slice sweet onions into 1/2-inch thick rings and separate into individual rings.
