This easy, festive bark combines creamy chocolate, crunchy Mint Oreos, crispy rice cereal, and peppermint for a crowd-pleasing Christmas treat. With just four ingredients and a quick prep, it’s perfect for holiday gifting or snacking.

  • 12 oz semi-sweet chocolate chips
  • 15 Mint Oreo cookies, crushed
  • 1 cup crispy rice cereal
  • 1/2 teaspoon peppermint extract
  • Optional: extra Oreo crumbs for topping
  • Optional: sprinkles or crushed candy canes for garnish

Instructions

  1. Line a 13×9 inch baking sheet with parchment paper or a silicone baking mat.
  2. Place Mint Oreo cookies in a zip-top bag and crush with a rolling pin until you have bite-sized chunks.
  3. Melt chocolate chips in a microwave-safe bowl: microwave on high for 30 seconds, stir, then continue in 15-second intervals until smooth (about 1–1.5 minutes total). Alternatively, melt gently in a double boiler.
  4. Stir in crispy rice cereal until evenly coated.
  5. Add peppermint extract and most of the crushed Oreos (reserve some for topping). Stir gently to combine.
  6. Spread mixture onto prepared pan in an even layer about 1/2 inch thick. Sprinkle reserved Oreo chunks and optional toppings on top, pressing lightly.
  7. Chill in the refrigerator for at least 30 minutes, or until fully hardened.
  8. Lift bark out of the pan and break into 2–3 inch shards. Serve, gift, or store as desired.

Notes

For gluten-free, use gluten-free sandwich cookies and check crispy rice cereal labels. Dairy-free chocolate chips can be substituted. Work quickly once mix-ins are added, and use quality chocolate for best results. Bark keeps well in the fridge for up to 2 weeks or freezer for 3 months.
