These crispy turkey bites combine the tenderness of Instant Pot cooking with a rich brown butter glaze, perfect for a quick and festive St. Patrick’s Day dish.

Ingredients

Scale
  • 1.5 pounds lean ground turkey
  • 4 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon lemon juice

Instructions

  1. In a large mixing bowl, combine ground turkey with garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix gently until just combined.
  2. Shape the mixture into small, bite-sized balls about 1 inch in diameter, yielding roughly 20-24 pieces. Place on a plate or tray.
  3. Pour 1 cup of water into the Instant Pot and place the metal trivet inside. Arrange turkey bites on the trivet in a single layer if possible.
  4. Close the lid and set the valve to sealing. Pressure cook on high for 8 minutes. Allow natural release for 5 minutes, then quick release remaining pressure.
  5. While turkey cooks, melt butter in a skillet over medium heat until golden brown and nutty, about 3-5 minutes. Remove from heat and stir in brown sugar and lemon juice. Set aside.
  6. Heat olive oil in a large skillet over medium-high heat. Using a slotted spoon, transfer turkey bites from Instant Pot to skillet. Fry 2-3 minutes per side until golden and crispy, working in batches if needed.
  7. Toss crispy turkey bites gently in the brown butter glaze. Garnish with chopped parsley and serve immediately.

Notes

Do not overmix the turkey to avoid tough bites. Use natural pressure release to keep turkey tender. Avoid overheating butter to prevent bitterness. Work in batches when frying to maintain crispiness. Use a splatter guard to keep stovetop clean. Leftovers reheat best under a broiler or in a hot skillet to retain crispiness.
