Crispy Hot Brown Sliders Recipe with Turkey and Creamy Mornay Sauce Made Easy

These sliders combine crispy buns, lean turkey, and a creamy Mornay sauce with sharp cheddar and Gruyère cheese for a quick, indulgent treat perfect for gatherings or weeknights.

  • 1 pound sliced roasted turkey breast
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup Gruyère cheese, shredded
  • 1 teaspoon Dijon mustard
  • Pinch of freshly grated nutmeg
  • 1 teaspoon Worcestershire sauce
  • 6 slices cooked bacon, chopped (optional)
  • 1 large tomato, thinly sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt 4 tablespoons of unsalted butter in a medium saucepan over medium heat. Whisk in 4 tablespoons of all-purpose flour and cook for about 2 minutes until bubbly and golden.
  3. Gradually whisk in 2 cups of whole milk, continuing to whisk to prevent lumps. Cook for 5-7 minutes until the sauce thickens and coats the back of a spoon.
  4. Lower the heat and stir in 1 cup sharp cheddar cheese and 1/2 cup Gruyère cheese until melted and smooth. Mix in 1 teaspoon Dijon mustard, a pinch of nutmeg, 1 teaspoon Worcestershire sauce, and salt and pepper to taste. Keep warm on very low heat.
  5. Cut the 12 slider buns in half. Lightly butter the cut sides and toast them in a skillet or under the broiler for 2-3 minutes until golden and crispy.
  6. Assemble the sliders by layering slices of roasted turkey (about 1 ounce per slider) on each bottom bun, followed by a slice of tomato, then spoon a generous amount of the creamy Mornay sauce on top.
  7. Sprinkle chopped cooked bacon over the sauce if using, then top with the bun lids.
  8. Place the assembled sliders on a baking sheet and bake for 8-10 minutes until the sauce is bubbly and the sliders are warmed through.
  9. Serve immediately while warm and creamy.

Notes

Whisk continuously when making the Mornay sauce to avoid lumps. Toasting the buns before assembly prevents sogginess. If sauce thickens too much before assembling, whisk in a splash of milk to loosen. Freshly shredded cheese melts better than pre-shredded. For dairy-free or gluten-free versions, substitute ingredients accordingly.
