  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon smoked paprika

  • 1 teaspoon salt
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Remove the leaves and trim the stem end of the cauliflower. Place upright on a cutting board and slice into approximately 3/4-inch (2 cm) thick steaks, yielding about 3-4 steaks from the center.
  3. In a large bowl, combine olive oil, minced garlic, smoked paprika, salt, and black pepper. Stir well.
  4. Brush both sides of each cauliflower steak generously with the garlic oil mixture.
  5. Place the steaks on the baking sheet in a single layer. Sprinkle grated Parmesan evenly over each steak.
  6. Roast in the preheated oven for 20-25 minutes, flipping halfway through to ensure even browning. Watch for bubbling and golden Parmesan crust.
  7. Remove from oven and let rest for 5 minutes to set the cheese crust.
  8. Garnish with fresh chopped parsley if desired and serve warm.

Notes

If edges brown too quickly, tent loosely with foil to prevent burning. Leftover florets can be roasted with the same seasoning for a snack or salad topper. For dairy-free, substitute Parmesan with nutritional yeast or plant-based cheese. For a spicy kick, add cayenne pepper or red pepper flakes. Fresh herbs like thyme or rosemary can be added to the oil for extra flavor.
