  • Vegetable oil for frying
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch
  • Water for soaking potatoes

Instructions

  1. Wash and peel the russet potatoes. Slice them into thin strips about ΒΌ inch thick.
  2. Place the sliced potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.
  3. Combine paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper in a small bowl to make Cajun seasoning.
  4. Drain the potatoes and pat them dry with paper towels.
  5. Toss the dry potato strips with cornstarch until evenly coated.
  6. Heat vegetable oil in a deep fryer or heavy pot to 350Β°F (175Β°C).
  7. Working in small batches, carefully add the potato strips to the hot oil. Fry for about 3-4 minutes or until golden brown.
  8. Place the fried potatoes on a paper towel-lined plate to drain excess oil. Immediately sprinkle with Cajun seasoning while they’re still hot.
  9. Transfer the seasoned fries to a serving dish and enjoy them fresh and crispy.

Notes

For extra crispy fries, ensure the potatoes are fully dry before frying and work in small batches to maintain oil temperature. Adjust the cayenne pepper for desired spice level.
