  • 2 tablespoons unsalted butter, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tablespoons panko breadcrumbs (optional, for extra crunch)
  • Fresh chives or green onions, chopped (optional, for garnish)
  • Ranch or blue cheese dressing (optional, for dipping)
  • Thinly sliced celery (optional, for serving)

Instructions

  1. In a mixing bowl, combine shredded chicken, buffalo sauce, mayonnaise, salt, and black pepper. Mix until evenly coated.
  2. Grate mozzarella and sharp cheddar cheese and set aside.
  3. Spread a thin layer of softened butter on one side of each bread slice. Sprinkle panko breadcrumbs over the buttered sides and press gently to adhere.
  4. Place two bread slices, buttered side down, on a work surface. Layer half the mozzarella, half the cheddar, and the buffalo chicken mixture. Top with remaining cheese and finish with the other bread slices, buttered side up.
  5. Heat a nonstick or cast iron skillet over medium heat for 2 minutes.
  6. Add sandwiches to the skillet. Cook for 3-4 minutes per side, pressing gently with a spatula, until bread is golden and cheese is melted. Lower heat if bread browns too quickly.
  7. Transfer sandwiches to a cutting board and let rest for 1-2 minutes before slicing.
