  • 2 cups finely chopped broccoli (fresh or frozen, thawed and patted dry)
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs (regular or panko)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. If using fresh broccoli, wash and finely chop it into small pieces. For frozen broccoli, thaw completely and pat dry with paper towels.
  3. In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper. Stir until evenly mixed.
  4. Crack the eggs into the mixture and stir until everything is well combined.
  5. Scoop a tablespoon of the mixture and use your hands to roll it into a ball. Place each ball on the lined baking sheet, leaving space between them.
  6. Lightly brush the tops of the bites with olive oil for extra crispiness.
  7. Bake for 15-18 minutes, or until the bites are golden brown and firm to the touch.
  8. Let the bites cool for 5 minutes before serving.

Notes

Finely chop the broccoli for even cooking and blending with the cheese. Brush the bites with olive oil for a crispy exterior. Test bake one bite to adjust the mixture if needed.
