  • Nonstick cooking spray or parchment paper
  • Toothpicks

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or spray with nonstick cooking spray.
  2. Cut bacon slices into thirds (about 3-inch pieces).
  3. Wrap each smokie with a piece of bacon and secure with a toothpick.
  4. In a bowl, mix brown sugar, cayenne pepper (if using), and cracked black pepper.
  5. Roll each bacon-wrapped smokie in the brown sugar mixture, pressing gently so it sticks.
  6. Arrange smokies on the prepared baking sheet or on a wire rack set over the sheet.
