  • 1/3 cup pecans, chopped (toasted for extra crunch and flavor)
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • Pinch salt
  • 1 tablespoon unsalted butter, melted (or coconut oil for dairy-free)
  • 1 package refrigerated pie crusts (14 oz)
  • 1 tablespoon granulated sugar (for sprinkling)
  • 2 tablespoons pecans, finely chopped (for garnish)
  • Optional: drizzle of honey or maple syrup

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly brush a mini muffin tin with melted butter or oil.
  2. In a medium bowl, combine diced apples, chopped pecans, brown sugar, cinnamon, nutmeg, and salt. Drizzle with melted butter and mix until evenly coated.
  3. Unroll pie crusts onto a lightly floured surface. Use a 2-inch round cutter or glass to cut circles (24-28 rounds from two crusts).
  4. Press each dough round into the wells of the mini muffin tin, shaping up the sides. Spoon about 1 teaspoon of apple pecan filling into each crust.
  5. Sprinkle granulated sugar and chopped pecans over each filled bite. Optionally, drizzle with honey or maple syrup.
  6. Bake for 16-20 minutes, until crust is golden brown and filling is bubbly. Rotate pan halfway through for even browning.
  7. Remove from oven and let bites cool in the tin for 5 minutes. Use a spoon to lift each bite onto the parchment-lined sheet and cool for another 10 minutes.
  8. Serve warm or at room temperature.

Notes

Dice apples very small for even cooking. Toast pecans for extra flavor. Use cold dough for best texture. For gluten-free or dairy-free, substitute pie crust and butter as needed. Don’t overfill bites to avoid overflow. Cool bites before removing from tin for clean edges. Store in airtight container for up to 2 days at room temperature, 5 days refrigerated, or freeze for 2 months.
