  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • Zest of 1 lemon
  • Olive oil spray or neutral oil spray
  • Optional: pinch of smoked paprika

Instructions

  1. Pat the turkey breast dry with paper towels to remove moisture from the surface (approx. 3 minutes).
  2. In a mixing bowl, blend softened unsalted butter, fresh thyme, rosemary, garlic powder, onion powder, lemon zest, sea salt, and black pepper until well combined and fragrant (about 5 minutes).
  3. Using a kitchen brush or the back of a spoon, spread the herb butter evenly over the entire turkey breast, including under the skin if possible (7 minutes).
  4. Preheat the air fryer to 350°F (175°C) and let it warm up for 5 minutes.
  5. Place the turkey in the air fryer basket skin side up. Lightly spray the top with olive oil spray to encourage browning (2 minutes).
  6. Cook for 25–30 minutes, checking at 20 minutes to spray a little more oil if the turkey looks dry. Use a meat thermometer inserted into the thickest part aiming for 165°F (74°C). If it reaches 160°F (71°C), let it rest as the temperature will rise while resting.
  7. Remove the turkey from the air fryer and tent loosely with foil. Let it rest for at least 10 minutes before slicing.
  8. Slice against the grain and serve.
