A quick and easy recipe for crispy, cheesy Parmesan crusted salmon fillets cooked in the air fryer, perfect for weeknight dinners or a fancy treat in under 20 minutes.

  • 4 salmon fillets, skin-on or skinless, about 6 ounces (170g) each
  • 1/2 cup (50g) finely grated Parmesan cheese
  • 1/3 cup (35g) panko breadcrumbs (gluten-free panko optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • Olive oil spray or light cooking oil, for misting
  • Lemon wedges, to serve

Instructions

  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Pat the salmon fillets dry with paper towels to remove excess moisture and place them skin-side down on a plate.
  3. Lightly spray or brush olive oil over the top and sides of each fillet.
  4. In a shallow bowl, combine grated Parmesan, panko breadcrumbs, garlic powder, onion powder, dried Italian herbs, salt, and pepper. Mix well.
  5. Press the salmon fillets into the Parmesan mixture, coating the top and sides evenly.
  6. Place the coated fillets carefully into the air fryer basket in a single layer, crust side up. Avoid overcrowding.
  7. Cook for 8 to 10 minutes depending on thickness, until the crust is golden brown and salmon flakes easily with a fork. Flip halfway through cooking if needed.
  8. Carefully remove the salmon using a spatula or tongs and let rest for 1-2 minutes.
  9. Serve immediately with lemon wedges.

Notes

Pat salmon dry before coating to ensure crispiness. Use finely grated Parmigiano-Reggiano for best crust. Lightly spray olive oil to help crust brown without rubberiness. Avoid overcrowding air fryer basket. Flip gently halfway through cooking. Rest salmon before serving to let juices settle. For dairy-free, substitute Parmesan with vegan hard cheese or nutritional yeast with crushed nuts. Can bake in oven at 425°F (220°C) for 12-15 minutes with broil for last 2 minutes if no air fryer.
