A quick and easy twist on classic marshmallow treats using Lucky Charms cereal and a subtle Cajun spice kick, made crispy in the air fryer for a perfect sweet and spicy snack.

  • 6 cups (about 180g) Lucky Charms Cereal
  • 4 cups (about 200g) mini marshmallows
  • 3 tablespoons (42g) unsalted butter
  • 1 teaspoon Cajun spice mix (paprika, cayenne, garlic powder, oregano)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: ½ cup (60g) chopped pecans or walnuts
  • Optional: 1 tablespoon honey or maple syrup

Instructions

  1. Line a baking pan with parchment paper and spray lightly with cooking spray. Preheat air fryer to 320°F (160°C) for about 5 minutes.
  2. Melt 3 tablespoons (42g) unsalted butter in a microwave-safe bowl for about 30 seconds until fully liquid.
  3. Immediately add 4 cups (200g) mini marshmallows to the melted butter and stir gently to coat.
  4. Transfer the butter-marshmallow mixture to an air fryer-safe dish or bowl. Cook at 320°F (160°C) for 4-5 minutes, stirring halfway through, until marshmallows puff and become gooey but not burnt.
  5. Remove from air fryer and stir in 1 teaspoon vanilla extract, 1 teaspoon Cajun spice mix, and a pinch of salt. Add honey or maple syrup if using.
  6. Pour 6 cups (180g) Lucky Charms cereal into a large mixing bowl. Quickly add the melted marshmallow mixture and stir with a spatula to coat all cereal evenly.
  7. If desired, toss in ½ cup (60g) chopped pecans or walnuts and mix well.
  8. Transfer the sticky cereal mixture into the prepared pan. Use a buttered spatula or parchment paper to press it down firmly and evenly.
  9. Let the pan rest at room temperature for about 30 minutes or refrigerate for 15 minutes to set.
  10. Lift the treats out using the parchment paper edges and slice into squares or bars. Serve immediately or store for later.

Notes

Watch marshmallows closely while air frying to avoid burning; stir halfway through melting. Press treats firmly into the pan to help them hold together. Use parchment paper for easy removal and cleanup. Adjust Cajun spice to taste, starting with ½ teaspoon for milder heat. If no air fryer, melt marshmallows and butter on stovetop over low heat.
