A quick and easy breakfast recipe featuring crispy air-fried turkey or ham slices paired with softly cooked green-tinted eggs, perfect for a fun and flavorful start to your day.

  • 46 slices deli turkey or ham, thinly sliced
  • 34 large eggs, room temperature
  • 34 drops green food coloring (optional)
  • 1 teaspoon unsalted butter or cooking spray
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh herbs (chopped chives or parsley, optional)

Instructions

  1. Preheat your air fryer to 350°F (175°C) for about 3 minutes.
  2. Lightly grease the air fryer basket with butter or cooking spray. Lay the turkey or ham slices flat without overlapping.
  3. Air fry the turkey or ham slices for 4-5 minutes until edges are golden and crispy. Remove and set aside.
  4. Crack 3-4 large eggs into a mixing bowl. Add 3-4 drops of green food coloring (or turmeric as an alternative). Season with salt and black pepper. Whisk until smooth and evenly colored.
  5. Lightly grease a small oven-safe dish or silicone mold that fits inside your air fryer basket.
  6. Pour the egg mixture into the greased dish and place it inside the air fryer basket.
  7. Cook at 350°F (175°C) for 7-9 minutes, checking at 7 minutes. The eggs should be set but still moist on top.
  8. Carefully remove the egg dish using tongs or oven mitts. Plate the crispy turkey or ham slices around or under the eggs.
  9. Garnish with fresh herbs if desired and serve immediately.

Notes

Use room temperature eggs for even cooking and better texture. Avoid overcrowding the air fryer basket to ensure crispiness. Check eggs at 7 minutes to prevent overcooking. For fluffier eggs, whisk in 1 tablespoon of milk or cream before cooking. If you don’t have an air fryer, a non-stick skillet can be used but will not yield the same crispiness. Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat gently in the air fryer at 300°F for 3-4 minutes.
