Instructions

  1. Hard boil the eggs: Place 6 large eggs in a single layer in a saucepan and cover with cold water by about an inch. Bring to a boil over medium-high heat, then cover, remove from heat, and let sit for 10-12 minutes. Immediately transfer eggs to an ice bath to stop cooking and make peeling easier.
  2. Peel and halve the eggs: Once cool, gently tap and peel the shells off. Slice each egg in half lengthwise and carefully remove the yolks into a mixing bowl, keeping the whites intact.
  3. Make the creamy filling: Mash the yolks with a fork, then add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon white vinegar, 1/4 teaspoon garlic powder, and salt and pepper to taste. Mix until smooth and creamy. Adjust seasoning as needed.
  4. Fill the egg whites: Use a spoon or piping bag to fill the hollowed whites evenly with the yolk mixture, mounding slightly above the edge without overfilling.
  5. Prepare the crispy coating: In a shallow bowl, combine 1/2 cup panko breadcrumbs with 2 tablespoons grated Parmesan cheese. Gently press the filled eggs into the breadcrumb mixture to coat the tops evenly.
  6. Preheat the air fryer: Spray the basket lightly with butter or non-stick spray and preheat the air fryer to 350°F (175°C) for about 3 minutes.
  7. Air fry the bites: Place the coated deviled egg bites in the basket in a single layer with space between each. Air fry for 5-7 minutes, checking halfway to ensure even crisping. They should be golden brown and crispy on top but creamy inside.
  8. Garnish and serve: Remove carefully and sprinkle with smoked paprika. Serve warm, at room temperature, or cold.

Notes

Use eggs that are about a week old for easier peeling. Adjust filling consistency by adding more mayo or a splash of milk if too dry, or more yolk or breadcrumbs if too wet. Press breadcrumbs gently but firmly to ensure coating sticks. Spray air fryer basket well to prevent sticking and shake or rotate bites halfway through cooking for even crisping. Can substitute mayonnaise with Greek yogurt for a lighter filling or use gluten-free panko for gluten-free version. Fresh herbs like dill or chives add a nice flavor variation.
