Instructions

  1. Cut chicken into 1-inch pieces and pat dry with paper towels.
  2. Let chicken pieces air out for 10 minutes if moist.
  3. In a shallow bowl, mix flour, salt, pepper, garlic powder, and smoked paprika.
  4. In another bowl, whisk together eggs and milk until smooth.
  5. Dredge chicken pieces in flour mixture, shake off excess.
  6. Dip into egg wash, then dredge again in flour for a double coating.
  7. Set coated pieces onto a baking sheet.
  8. Preheat air fryer to 400°F for 3-5 minutes and spray basket with cooking spray or brush lightly with oil.
  9. Arrange chicken pieces in a single layer in the air fryer basket.
  10. Air fry at 400°F for 10-12 minutes, flipping halfway, until golden brown and crispy. If needed, reduce heat to 375°F and cook another 2 minutes.
  11. Check internal temperature; chicken should reach 165°F.
  12. While chicken cooks, melt butter in a small saucepan over low heat.

  14. Transfer cooked chicken to a large bowl and pour buffalo sauce over. Toss gently to coat.
  15. Let sit 1 minute to soak up flavor.
  16. Sprinkle with blue cheese crumbles and chopped parsley.
