Creamy Tuscan White Bean Soup Recipe – Easy & Cozy Meal

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium yellow or white onion, finely diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 sprig fresh rosemary or 1 teaspoon dried rosemary
  • 2 cups baby spinach
  • 1/4 cup heavy cream (optional, or substitute with coconut milk)
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Once shimmering, add the onions, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant.
  2. Add the garlic and cook for another minute, stirring frequently to avoid burning.
  3. Stir in the sun-dried tomatoes and rosemary. Let cook for about 2 minutes to release their flavors.
  4. Pour in the vegetable broth and add the cannellini beans. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
  5. Remove the rosemary sprig, and using an immersion blender, blend about half the soup directly in the pot. This will give it the creamy texture while keeping some beans whole for added heartiness.
  6. Return the soup to a gentle simmer and stir in the baby spinach. Cook for another 2-3 minutes until the spinach is wilted.
  7. If desired, add a splash of heavy cream or coconut milk for extra richness. Season with salt and pepper to taste.
  8. Ladle into bowls and garnish with freshly grated Parmesan cheese and a drizzle of olive oil. Serve warm and enjoy!
