These creamy mint chocolate chip fudge cups combine rich white chocolate and fresh peppermint for a festive, melt-in-your-mouth holiday treat that’s quick and easy to make.

  • 2 cups (12 oz) white chocolate chips
  • 8 oz cream cheese, softened
  • 1/4 cup (4 tbsp) unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 tsp pure peppermint extract
  • 1/2 cup mini semisweet chocolate chips
  • 34 drops green food coloring (optional)
  • 1/2 tsp vanilla extract

Instructions

  1. Line a mini muffin tin with cupcake liners or lightly grease silicone molds.
  2. Melt white chocolate chips in a microwave-safe bowl in 30-second bursts, stirring between until smooth and fully melted.
  3. In a large bowl, beat softened cream cheese and butter together until smooth and creamy, about 2-3 minutes.
  4. Gradually add sifted powdered sugar to the cream cheese mixture, mixing on low speed to avoid a sugar cloud.
  5. Stir in peppermint extract, vanilla extract, and green food coloring if using until the batter is smooth and evenly colored.
  6. Slowly pour melted white chocolate into the cream cheese mixture while mixing on low to keep it smooth.
  7. Gently fold mini chocolate chips into the batter using a spatula.
  8. Spoon batter into prepared liners or molds, filling each about 3/4 full and smooth the tops.
  9. Refrigerate fudge cups for at least 2 hours or until firm.
  10. Once chilled, remove fudge cups from liners or molds and serve.

Notes

Ensure cream cheese and butter are softened but not melted to avoid lumps. Melt white chocolate slowly to prevent seizing; if it seizes, add a teaspoon of coconut oil and stir gently. Chill fudge cups for at least 2 hours for best texture. For firmer fudge, freeze for 10-15 minutes before serving.
