  • Pinch of salt

Instructions

  1. Line an 8×8 inch (20×20 cm) square pan with parchment paper, leaving some overhang on the sides for easy lifting later. Set aside.
  2. In a microwave-safe bowl, combine 2 cups (340 g) white chocolate chips and 4 tablespoons (56 g) softened unsalted butter. Microwave in 20-second intervals, stirring after each, until fully melted and smooth. Alternatively, use a double boiler over simmering water. This step should take about 3-4 minutes total.
  3. Stir in 1 can (14 oz / 396 g) sweetened condensed milk and 1 teaspoon pure peppermint extract into the melted chocolate mixture. Add a pinch of salt to balance sweetness. If using green food coloring, add a few drops now and stir until color is evenly distributed.
  4. Gently fold 1 cup (170 g) mini semisweet chocolate chips into the mixture. Be careful not to overmix; you want the chips distributed but the mixture still smooth and creamy.
  5. Pour the fudge mixture into the prepared pan, smoothing the top with a spatula. Refrigerate for at least 2 hours or until firm.
  6. Once set, use the parchment paper overhang to lift the fudge out of the pan. Cut into 1-inch (2.5 cm) squares or bite-sized pieces.
