Ingredients

Scale
  • 10 oz frozen chopped spinach, thawed and drained
  • 14 oz canned artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, finely minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Thaw the frozen spinach completely and squeeze out excess water using a clean kitchen towel or cheesecloth. Drain and chop the canned artichoke hearts into bite-sized pieces.
  2. In a medium bowl, combine softened cream cheese, sour cream, and minced garlic. Mix until smooth and creamy.
  3. Fold in grated Parmesan and mozzarella cheeses along with salt, black pepper, and crushed red pepper flakes if using.
  4. Gently fold in the drained spinach and chopped artichokes, being careful not to overmix.
  5. Spoon the mixture into a greased 9×9-inch baking dish and smooth the top with a spatula.
  6. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until edges are bubbly and top is lightly golden.
  7. While baking, melt butter in a small saucepan over medium heat. Add finely minced garlic and cook gently for 1-2 minutes until fragrant. Stir in chopped parsley and remove from heat.
  8. As soon as the dip comes out of the oven, drizzle the warm garlic butter evenly over the top.
  9. Serve immediately with crusty bread, tortilla chips, or fresh veggies.

Notes

Drain spinach and artichokes thoroughly to avoid watery dip. Use room temperature cream cheese for better blending. Cook garlic butter on low heat to prevent bitterness. Cover dish with foil if top browns too quickly. For smoother dip, pulse spinach and artichokes in a food processor before mixing.
