Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, cream the softened butter, granulated sugar, and light brown sugar until fluffy (about 2-3 minutes). Add the eggs and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  4. Spread the snickerdoodle dough evenly into the prepared pan, pressing it down with a spatula or your fingers.
  5. In another bowl, beat the cream cheese and sugar until smooth and creamy (about 2 minutes). Add the eggs and vanilla extract, beating until fully incorporated.
  6. Pour the cheesecake batter over the snickerdoodle base, spreading it out evenly.
  7. Mix the granulated sugar and cinnamon together, then sprinkle it evenly over the cheesecake layer.
  8. Bake for 35-40 minutes, or until the cheesecake layer is set and the edges are golden brown.
  9. Let the bars cool on a wire rack before refrigerating for at least 2 hours to set the cheesecake layer.
  10. Once chilled, use a sharp knife to cut the bars into squares. Serve and enjoy!
