  • 1 1/2 cups smoked gouda cheese, shredded
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Pinch of nutmeg

Instructions

  1. Heat the butter in a large pot over medium heat. Once melted, add the diced onion and sauté for about 4-5 minutes, until softened and fragrant. Stir in the minced garlic and cook for another 30 seconds.
  2. Sprinkle the flour over the onion mixture and whisk until fully combined. Cook for 2 minutes to eliminate the raw flour taste.
  3. Gradually pour in the broth while whisking continuously to avoid lumps. Bring the mixture to a simmer.
  4. Add the chopped broccoli florets and cover the pot. Cook for 10-12 minutes, or until the broccoli is tender.
  5. Using an immersion blender, puree the soup until smooth. If using a standard blender, carefully transfer the soup in batches and blend until creamy.
  6. Return the soup to the pot and stir in the heavy cream, shredded smoked gouda, salt, pepper, and a pinch of nutmeg. Cook over low heat, stirring frequently, until the cheese is fully melted and the soup is velvety.
  7. Taste and adjust seasoning as needed. Serve hot with crusty bread or a sprinkle of extra gouda on top!
