  • 3/4 cup (150 g) granulated erythritol
  • 2 tsp vanilla extract

  • 6 tbsp (85 g) unsalted butter, melted
  • 3 large garlic cloves, minced fresh
  • 1/4 tsp salt
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Line a 9×13-inch (23×33 cm) sheet pan with parchment paper, leaving some overhang for easy removal.
  2. Prepare the crust: In a medium bowl, combine almond flour, 3 tbsp melted unsalted butter, and a pinch of salt. Mix until the mixture resembles wet sand.
  3. Press the crust evenly into the bottom of the prepared sheet pan. Pack it down firmly and bake for 10 minutes to set.
  4. Make the cheesecake batter: Beat softened cream cheese with erythritol using an electric mixer until smooth and fluffy (3-4 minutes).
  5. Add eggs one at a time, mixing well after each addition until the batter is silky and thick.
  6. Mix in vanilla extract and lemon juice if using.
  7. Whip cold heavy cream to soft peaks and gently fold it into the cream cheese batter in three additions.
  8. Pour the batter over the pre-baked crust and spread evenly.
  9. Bake for 45-50 minutes until edges are set but the center jiggles slightly.
  10. While baking, prepare the garlic butter drizzle: Melt 3 tbsp unsalted butter over low heat, add minced garlic and salt, cook gently for 2-3 minutes until fragrant, then remove from heat.
  11. Let the cheesecake cool completely in the pan on a wire rack for 1-2 hours, then refrigerate for at least 4 hours or overnight.
  12. Just before serving, drizzle the garlic butter evenly over the chilled cheesecake. Slice into squares and enjoy.
