  • 2 cups shredded rotisserie chicken
  • 2 cups fresh broccoli florets
  • 12 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • Pinch of nutmeg (optional)
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, about 10 minutes. Drain and set aside.
  2. While the pasta cooks, steam or blanch the broccoli florets for 2-3 minutes until tender yet crisp. Set aside.
  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and sautΓ© for about 1 minute until fragrant.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Let the mixture simmer gently for 5 minutes to thicken slightly.
  5. Stir in the Parmesan cheese, shredded rotisserie chicken, and a pinch of nutmeg. Cook for another 3-4 minutes, stirring occasionally.
  6. Add the drained pasta and steamed broccoli to the skillet. Toss everything together until the pasta is coated and the chicken and broccoli are evenly distributed.
  7. Season with salt and pepper to taste. If the sauce seems too thick, you can add a splash of pasta water to loosen it up.
  8. Serve warm and garnish with extra Parmesan and freshly cracked black pepper, if desired.

Notes

Reserve pasta water to adjust sauce consistency. Use fresh Parmesan for better melting. Don’t skip the nutmeg for added depth.
