  • 1 cup pumpkin puree
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 egg

Instructions

  1. Preheat your oven to 325°F (165°C). Grease your 9×13-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand. Press firmly into the bottom of the prepared baking dish to form an even layer. Bake for 8 minutes, then let cool.
  3. In a large bowl, beat softened cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Pour the cheesecake mixture evenly over the cooled crust.
  4. In another mixing bowl, whisk together pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and cloves. Add the egg and mix until smooth and well combined.
  5. Carefully spoon the pumpkin spice mixture over the cheesecake layer, spreading it gently to cover the surface. Smooth out any uneven spots with a spatula.
  6. Bake the bars in the preheated oven for 35-40 minutes, or until the center is set and no longer jiggles when gently shaken.
  7. Remove the baking dish from the oven and let the bars cool completely on a cooling rack. Refrigerate for at least 3 hours or overnight.
  8. Slice into squares or bars and serve chilled. Wipe the knife clean between cuts for neat layers.
