  • 23 green onions, finely chopped

  • 2 tbsp soy sauce

  • Salt and pepper to taste
  • About 40 round dumpling wrappers (store-bought, thin and pliable)
  • 2 tbsp vegetable oil (for pan-frying)
  • ½ cup water (for steaming during cooking)
  • Optional dipping sauce: 3 tbsp soy sauce, 1 tbsp rice vinegar, chili flakes or chili oil to taste, sesame seeds for garnish

Instructions

  1. Prepare the Filling (10 minutes): In a mixing bowl, combine ground pork, softened cream cheese, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix gently but thoroughly until evenly incorporated.
  2. Fill the Dumplings (15-20 minutes): Lay out dumpling wrappers on a clean surface. Use a small spoon or cookie scoop to place about 1 teaspoon (5 g) of filling in the center of each wrapper. Avoid overfilling.
  3. Seal the Dumplings: Moisten edges of the wrapper with water. Fold the wrapper in half over the filling to form a half-moon shape. Pinch edges together tightly, making small pleats if desired.
  4. Heat the Pan (2 minutes): Add 2 tablespoons vegetable oil to a non-stick skillet over medium heat. Heat until oil shimmers but does not smoke.
  5. Cook the Dumplings (10 minutes): Place dumplings flat-side down in the pan without overcrowding. Fry for 2-3 minutes until bottoms are golden brown and crispy.
  6. Steam the Dumplings: Pour about ½ cup water into the skillet and immediately cover with a lid. Steam for 6-7 minutes until water evaporates and dumplings are tender.
  7. Finish and Serve: Remove lid and let dumplings crisp up for another minute if needed. Transfer to a plate and serve hot with dipping sauce.

Do not overfill dumplings to avoid bursting during cooking. Use softened cream cheese for smooth filling. Seal edges well by moistening with water and pinching firmly. Use moderate heat to get crispy bottoms without burning. Steam under lid to fully cook pork and melt cheese. If dumplings stick to pan, gently loosen with spatula while warm. For gluten-free, use rice or tapioca-based wrappers. Baking option: brush dumplings with oil and bake at 375°F for 15-20 minutes.
