A quick and easy one-skillet meal featuring creamy sauce, spicy Tuscan sausage, and pillowy gnocchi. Perfect for busy weeknights and minimal cleanup.

  • 12 ounces Italian sausage (spicy or mild), casing removed
  • 1 pound potato gnocchi (store-bought or homemade)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sausage and cook, breaking into bite-sized pieces, until browned and cooked through, about 6-8 minutes. Transfer sausage to a plate, leaving rendered fat in the pan.
  2. Reduce heat to medium-low. Add minced garlic to the skillet and stir for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 1-2 minutes.
  3. Add gnocchi to the skillet and stir gently to coat in the garlic and tomato mixture. Let gnocchi brown slightly on the bottom for 2-3 minutes.
  4. Pour in heavy cream and chicken broth. Stir gently to combine. Add baby spinach, cover skillet with a lid, and cook for 3-4 minutes until spinach wilts and sauce thickens.
  5. Return cooked sausage to the skillet. Sprinkle in grated Parmesan cheese, dried Italian herbs, salt, and pepper. Stir gently to combine and melt the cheese.
  6. Taste and adjust seasonings as needed. Let rest off heat for 1-2 minutes before serving.

Notes

If the sauce is too thick, add a splash more broth or cream. If too thin, simmer uncovered to reduce. For gluten-free, use gluten-free or cauliflower gnocchi. For dairy-free, substitute heavy cream with coconut or cashew cream and Parmesan with nutritional yeast or dairy-free cheese.
