  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • Salt and pepper, to season generously
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup chopped sun-dried tomatoes (about 75 g), packed in oil and drained
  • 1 cup chicken broth (240 ml), homemade or low-sodium store-bought
  • 1 cup heavy cream (240 ml), or half-and-half for lighter version
  • 1/2 cup grated Parmesan cheese (about 50 g), Parmigiano-Reggiano recommended
  • 1 teaspoon Italian seasoning (blend of oregano, basil, thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped (for garnish)
  • 1/4 cup white wine (60 ml), optional

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Heat olive oil and butter together over medium heat in a large skillet. Add chicken breasts and cook until golden brown on both sides, about 4 minutes per side. Remove chicken and set aside.
  3. Lower heat to medium-low. Add minced garlic to the skillet and stir until fragrant but not browned, about 2-3 minutes.
  4. Add chopped sun-dried tomatoes and stir for about 1 minute to release their flavor.
  5. Pour in white wine (if using), scraping up browned bits from the pan. Simmer until reduced by half, about 2 minutes.
  6. Add chicken broth and heavy cream, stirring gently to combine. Bring to a gentle simmer and let the sauce start to thicken, about 5 minutes.
  7. Stir in grated Parmesan cheese, Italian seasoning, and red pepper flakes if desired. Stir until cheese melts and sauce is smooth, about 3 minutes. Taste and adjust seasoning.
  8. Return chicken breasts to the skillet, nestling them into the sauce. Cover and simmer on low heat for 8-10 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  9. Sprinkle chopped fresh basil over the chicken and sauce just before serving.

Notes

If sauce is too thick, add a splash more broth or cream to loosen. If too thin, simmer uncovered longer. Let chicken rest a few minutes before slicing to keep juicy. Use sun-dried tomatoes packed in oil for best texture; rehydrate dry ones if needed. For dairy-free, substitute heavy cream with full-fat coconut milk and Parmesan with nutritional yeast.
