  • 2 pounds (900 grams) russet potatoes, peeled and diced
  • 4 tablespoons (60 grams) unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup (30 grams) all-purpose flour
  • 4 cups (950 ml) chicken broth, low-sodium preferred
  • 1 cup (240 ml) whole milk
  • 1 1/2 cups (170 grams) sharp cheddar cheese, shredded
  • 6 slices bacon, cooked crisp and crumbled
  • 1/2 cup (120 ml) sour cream
  • 3 stalks green onions, thinly sliced
  • Salt and black pepper to taste
  • Optional: chives for garnish
  • Optional: smoked paprika for smoky heat

Instructions

  1. Peel and dice the russet potatoes into roughly 1-inch cubes. Chop the onion finely and mince the garlic cloves. Cook bacon until crisp, then crumble and set aside.
  2. In a large heavy-bottomed pot, melt the butter over medium heat. Add chopped onions and cook, stirring occasionally, until translucent and fragrant, about 5 minutes. Add minced garlic and cook for another minute without browning.
  3. Sprinkle the flour over the onions and garlic. Stir constantly for about 2 minutes to cook out the raw flour flavor and thicken the mixture.
  4. Slowly pour in the chicken broth while stirring to prevent lumps. Add diced potatoes and bring to a boil. Reduce heat to a simmer and cook until potatoes are tender, about 15 to 20 minutes.
  5. Use a potato masher or immersion blender to mash about half of the potatoes in the pot, leaving some chunks for texture.
  6. Stir in the whole milk and shredded cheddar cheese. Continue stirring until the cheese is fully melted and the soup is creamy. Season with salt and black pepper to taste.
  7. Remove the pot from heat and stir in the sour cream for tang and extra creaminess. Taste and adjust seasoning if necessary.
  8. Ladle soup into bowls and top with crumbled bacon, sliced green onions, extra cheese, and a dollop of sour cream if desired. Sprinkle smoked paprika or chopped chives for extra flavor.

Notes

If soup is too thick, stir in a splash of milk or broth to reach desired consistency. Blend only half the potatoes to keep texture. Cook bacon separately to keep it crispy. Use low-sodium broth to control saltiness. For dairy-free, swap butter and milk with plant-based alternatives and omit cheese or use vegan cheese.
