  • 8 oz beef steak (ribeye or sirloin), thinly sliced

  • 2 nori sheets, torn
  • 1 tbsp sesame seeds
  • Fresh cilantro or basil (optional, for garnish)

Instructions

  1. In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp sesame oil, 1 minced garlic clove, 1 tsp brown sugar, and 1/2 tsp black pepper. Add thinly sliced beef and toss to coat. Marinate for 10 minutes.
  2. In a large saucepan, combine 4 cups water and 2 cups chicken or vegetable broth. Bring to a gentle simmer over medium heat.
  3. Add 2 cloves minced garlic, 2 tbsp gochujang, 1 tbsp soy sauce, and 2 tsp sesame oil to the broth. Whisk in 1/2 cup heavy cream and 2 oz cream cheese until melted and smooth. Add 1 tsp rice vinegar if desired.
  4. Heat a grill pan or outdoor grill over high heat. Cook beef slices for 1-2 minutes per side until browned and crispy at the edges. Remove and set aside.
  5. Add ramen noodles to the simmering broth. Cook for 2-3 minutes, stirring gently, until noodles are just tender.
  6. Use a slotted spoon to scoop noodles into bowls. Ladle creamy broth over noodles, then top with grilled beef.
  7. Add halved soft-boiled eggs, kimchi, torn nori sheets, sliced scallions, and sesame seeds. Garnish with cilantro or basil if desired.
  8. Serve immediately while hot. If broth thickens, add a splash of hot water or broth.
