  • 1 cup diced ham (smoked or honey-glazed)
  • 1 cup fresh spinach, roughly chopped (or kale or Swiss chard)
  • ½ cup green onions, sliced
  • 1 cup shredded sharp cheddar cheese (or mozzarella)
  • ½ cup Parmesan cheese, finely grated

Instructions

  1. Preheat your oven to 375°F (190°C) and allow it to reach temperature.
  2. Heat a skillet over medium heat with a splash of oil or butter. Sauté craft beef and diced ham for 3-4 minutes until lightly browned.
  3. Add chopped spinach and green onions to the skillet and cook for another 2 minutes until spinach wilts. Set aside to cool slightly.
  4. In a large bowl, whisk together eggs, milk, Dijon mustard, salt, and pepper until fully blended and slightly frothy.
  5. Gently fold the meat and veggie mixture into the egg base, being careful not to overmix.
