  • 24 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 12 tablespoons olive oil
  • 6 slices bacon, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning

Instructions

  1. Place chicken breasts between two pieces of plastic wrap and pound to an even thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.
  2. Heat a large skillet over medium-high heat and add olive oil. Once hot, add the chicken breasts and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside.
  3. In the same skillet, add chopped bacon and cook until crispy, about 5 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate.
  4. Reduce the heat to medium and add minced garlic to the bacon grease. Cook for about 30 seconds, stirring constantly to avoid burning.
  5. Pour in the chicken broth, scraping the bottom of the skillet to deglaze and mix in the flavorful bits.
  6. Add heavy cream and stir until combined. Bring the mixture to a gentle simmer.
  7. Add grated Parmesan cheese and stir until melted and fully incorporated into the sauce. If the sauce is too thick, add a splash of chicken broth to thin it out.
  8. Add sun-dried tomatoes and Italian seasoning, stirring to combine. Let the sauce simmer for another 2-3 minutes.
  9. Add fresh spinach and cooked bacon to the skillet. Stir until the spinach wilts and everything is well coated in the sauce.
  10. Return the cooked chicken breasts to the skillet, spooning the sauce over them. Let them simmer together for 2-3 minutes to absorb the flavors.
  11. Serve immediately with your choice of sides such as pasta, mashed potatoes, or crusty bread.
