  • Salt and freshly ground black pepper, to taste

Instructions

  1. Trim excess fat from the beef chuck roast and cut into roughly 1-inch cubes. Pat dry with paper towels.
  2. Heat 2 tablespoons butter in a large skillet over medium heat. Add sliced cremini mushrooms and chopped onion, cooking until softened and lightly browned, about 6-8 minutes. Stir in minced garlic for the last minute.
  3. Place beef pieces in the crockpot. Add sautéed mushrooms, onions, and garlic on top.
  4. Pour in beef broth, Dijon mustard, and Worcestershire sauce. Season with salt and pepper. Stir gently to combine.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until beef is tender and shreds easily.
  6. About 30 minutes before serving, mix flour with sour cream in a bowl until smooth. Stir this mixture into the crockpot.
  7. Cover and cook on high for another 20-30 minutes to thicken the sauce.
  8. Taste and adjust seasoning with salt or pepper as needed. If sauce is too thick, stir in a splash of beef broth or water.
  9. Serve the beef stroganoff over cooked egg noodles or rice. Garnish with chopped fresh parsley if desired.
