  • 1 cup small-curd cottage cheese
  • ½ cup cold heavy whipping cream
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • Optional toppings: extra raspberries, mint leaves, powdered sugar

Instructions

  1. In a blender or food processor, combine cottage cheese, raspberries, honey, vanilla extract, and lemon zest. Blend until smooth, about 2-3 minutes.
  2. In a large mixing bowl, whip the cold heavy cream until soft peaks form, about 4-5 minutes.
  3. Gently fold the whipped cream into the raspberry-cottage cheese mixture using a spatula.
  4. Divide the mousse into serving glasses or bowls, cover with plastic wrap, and refrigerate for at least 1 hour.
  5. Before serving, top with fresh raspberries, mint leaves, or powdered sugar. Serve chilled.

Notes

Use small-curd cottage cheese for a smoother texture. Chill the mousse for at least an hour to allow flavors to meld. Adjust sweetness to taste by adding more or less honey.
