Ingredients

  • 2 tablespoons (30ml) honey
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 cup (45g) mini chocolate chips
  • 2 tablespoons (30g) peanut butter
  • 2 tablespoons (15g) quick oats
  • Pinch of salt
  • Optional: 1 tablespoon (10g) chia seeds
  • Optional: Maple syrup (swap for honey)
  • Optional: Dairy-free yogurt (e.g., coconut yogurt)

Instructions

  1. In a large mixing bowl, whisk together Greek yogurt, honey, and vanilla extract until smooth.
  2. Fold in mini chocolate chips, peanut butter, quick oats, and a pinch of salt. Stir gently until everything is evenly combined.
  3. Optional: Add chia seeds or swap honey for maple syrup.
  4. Spoon the mixture into your ice cube tray or silicone molds, filling each compartment about three-quarters full.
  5. Place the tray in the freezer for at least 2 hours, or until the bites are completely set.
  6. Once frozen, pop the bites out of the molds and enjoy! Store any extras in a freezer-safe container.
