  • 9 ounces cheese tortellini, fresh or frozen
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced (or 1 tsp garlic powder)
  • 4 cups chicken broth (low sodium preferred)
  • 1 cup heavy cream (or half-and-half for lighter option)
  • ½ cup freshly grated Parmesan cheese, plus extra for garnish
  • 1 tablespoon olive oil
  • Pinch of red pepper flakes (optional)
  • 2 cups fresh spinach, roughly chopped (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Finely chop the onion and mince the garlic cloves. Roughly chop the spinach if using. Set aside.
  2. Heat olive oil over medium heat in a large heavy-bottomed pot. Add Italian sausage, breaking it apart with a spoon. Cook for 7-8 minutes until browned and cooked through. Drain excess fat if needed, leaving a little for flavor.
  3. Reduce heat to medium-low. Add chopped onion and sauté until translucent, about 4 minutes. Stir in garlic and cook for another minute until fragrant, being careful not to burn it.
  4. Pour in chicken broth, scraping browned bits from the bottom of the pot. Increase heat to medium-high and bring to a gentle simmer.
  5. Add cheese tortellini directly into the simmering broth. Cook according to package instructions, about 3-5 minutes, until tender but still holding shape.
  6. Lower heat to medium-low. Stir in heavy cream and grated Parmesan cheese until cheese melts and soup is creamy. Season with salt, pepper, and red pepper flakes if desired.
  7. Add chopped spinach and stir until wilted, about 2 minutes. Taste and adjust seasoning as needed.
  8. Ladle soup into bowls, garnish with extra Parmesan and cracked black pepper, and serve immediately.

Notes

If soup thickens after sitting, stir in a splash of broth or water when reheating. Browning the sausage well is key for flavor. Add cream off heat or on low to prevent curdling. Adjust seasoning gradually as Parmesan adds saltiness. For gluten-free, use gluten-free tortellini or gnocchi. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
